Made exclusively from Tonda Iblea variety olives hand-harvested from mid-October through mid-November in the central-eastern area of Sicily near the Mt. Etna volcano. This oil is intensely fruity with pronounced notes of green tomato, aromatic herbs and freshly cut grass with intense, yet well balanced bitterness and pungency.
