Carter & Cavero introduces Coratina, a new extra virgin olive oil that’s getting a lot of attention! The Coratina olive is native to the Puglia region of Italy and grown today throughout the world. Our Coratina is grown in the southern hemisphere, in the desert, in Pisco, Peru. Pisco is a narrow coastal strip between the Andes Mountains and the Pacific Ocean with mild desert climate and almost no rainfall. Deep underground rivers originating in the Andes cross Pisco beneath the sand providing plenty of water for plant growth. While appearing dry and arid above ground, the land is easily hydrated with deep wells. Pisco’s isolated desert in Peru keeps a temperature that is optimal for growing olives and therefor making excellent, award winning olive oil.
