Once summer rolls around, I am on a constant search for great salads. This recipe was one I felt worth sharing.

Salad Greens with Red Apple Balsamic and Pecorino Romano

What you’ll need for the salad:

1 bag of Spring Mix Greens or any other type of lettuce, torn into pieces
15 to 20 Grape tomatoes
1 sliced cucumber

1 green apple pealed and cut into slices
1/4lb of aged Pecorino Romano cheese sliced paper thin and cut into 1-2 inch pieces
1 handful of chopped walnuts
Sea salt and pepper to taste

What you’ll need for the dressing:
1/4 to 1/3 cup of Red Apple Balsamic Vinegar
1tbs Dijon mustard
1tbs Roasted Garlic Olive Oil
1/4 cup or less of Organic Arbequina or another strong olive oil

What to do:
Combine the balsamic vinegar and mustard in a mixing bowl. Slowly whisk in the Arbequina and Roasted Garlic olive oils. Set aside. Combine the greens and cucumber in a large salad bowl. Layer the greens with the tomatoes, walnuts, and apple slices. Pour dressing over salad. Finally, scatter the cheese on top. Sprinkle with sea salt and pepper to taste.
