Ingredients:

  • 1.5 lbs baby potatoes (halved)

  • 2 tbsp olive oil

  • 2 tbsp Carter & Cavero Pesto Parmesan spice blend

  • ¼ cup grated Parmesan cheese (optional, for extra cheesiness)

  • 1 tbsp chopped fresh parsley (for garnish)

  • Salt & pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a large bowl, toss the halved potatoes with olive oil, Pesto Parmesan spice blend, salt, and pepper until well coated.

  3. Spread the potatoes in a single layer on the baking sheet.

  4. Roast for 30-35 minutes, flipping halfway through, until golden brown and crispy.

  5. Sprinkle with grated Parmesan cheese (if using) and bake for an additional 2-3 minutes until melted.

  6. Remove from oven, garnish with fresh parsley, and serve warm.
