Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, toss the halved potatoes with olive oil, Pesto Parmesan spice blend, salt, and pepper until well coated.

Spread the potatoes in a single layer on the baking sheet.

Roast for 30-35 minutes, flipping halfway through, until golden brown and crispy.

Sprinkle with grated Parmesan cheese (if using) and bake for an additional 2-3 minutes until melted.
