Ingredients:
- 1 bag mixed spring greens
- 1 Granny Smith Apple – sliced
- 1/4 cup dried cranberries
- 1/4 cup raw pecans ( or walnuts! )
- 1/4 cup crumbled cheese, we like bluecheese!
- 1/4 cup Arbequina Novello EVOO
- 2 tbsp Green Apple Balsamic Vinegar
- 1 1/2 tsp honey
- 1 tsp Dijon Mustard
- 1/4 tsp fine salt
Preparation:
- Whisk together olive oil, balsamic vinegar, honey, and dijon mustard. Set aside.
- In a salad bowl combine spring greens, cranberries, nuts.
- Top salad with apple slices and enjoy!
