4 grilled peaches roughly chopped
1 Jalepeno, seeded and diced
1/2 medium red onion, chopped 1/4 c.
C&C Peach Balsamic Vinegar
4 Tbsp. C&C Chipotle Olive Oil
Coarse Sea Salt to taste (Peruvian Pink Salt)
Saute onions in a frying pan with Chipotle Olive Oil until they are softened and transparent, approximately 5 to 7 minutes. Combine onions with peaches, jalepeno, Peach Balsamic Vinegar, sea salt and pepper. Serve on grilled fish, shrimp, chicken, couscous or eat as a salsa with chips .
