Its aroma is pronounced and herbaceous with hints of tomato vine, artichoke and olive leaf. Its taste is well-balanced in bitter and spicy notes with pleasant peppery finish. Emerald green in color with a robust flavor. This oil is perfect for complementing complex-flavored foods such as grilled meats, octopus, squash and hearty soups. -
Extremely robust and sky-high polyphenols (724 ppm/kg) summarize this year’s 2024 crush green Coratina’s primary characteristics. You will experience surprisingly bright, balanced bitterness and spicy, fruity flavors upon tasting. The finish has hints of wild chicory, bitter green almond, and black pepper. This Italian olive cultivar is known for its aromatic notes of olive leaf, green grass, and artichoke, as well as its subtle hints of tomato. Our medium-intensity Peranzana opens with aromas of herbaceous olive leaf, fresh-cut grass, green apple, green banana, and green tomato. It is harmonious and clean, with flavors of bitter artichoke and green almond and a pleasant spicy finish. Crushed in early October from under-ripe fruit, this EVOO is a unique early harvest example of competition-quality Italian perfection for drizzling over fish, pasta, and artisan bread. -
Beautiful in every way, our hand-harvested Frantoio is a culinary gem from the best olive trees in Puglia. Harvested early from green Moresca and Biancolilla olives and bottled soon after crushing, this limited-edition olive oil captures the true taste of the Sicilian olive harvest. Fresh and intensely fruity, it reveals pronounced notes of freshly cut grass, aromatic herbs, artichoke, and green almond. The flavor is full-bodied and enveloping, with a lively balance of bitterness and spice that reflects its freshness. Partially filtered through fine cotton filters that remove only the larger solids, Frescolio maintains a naturally cloudy appearance as smaller olive particles remain suspended. Over time, a light, natural deposit may form at the bottom of the bottle — a hallmark of authentic, minimally filtered olive oils. Enjoy it raw over freshly baked bread, bruschetta, or legume soups. It also enhances grilled meats, hearty winter stews, and robust Mediterranean dishes. -
