A medium intensity oil with low bitterness, strong pungency, and moderate fruitiness. It is quite complex, with several ripe, fruity flavors of butter, nuttiness, and apple – plus some bright, spicy, herbaceous flavors of mint, cinnamon, and chili pepper, especially green apple and black pepper. It is very nicely balanced and relatively fresh tasting. -
Made exclusively from Biancolilla variety olives hand-harvested from mid-October to mid-November in the area of Ribera e Caltabellotta in central-western Sicily. This medium intensity has a floral aroma with hints of artichoke and a slightly bitter finish with pronounced spiciness. Try this oil on vegetable soups, marinated fish, fish soup, beef carpaccio and raw vegetables. -
Extremely robust and sky-high polyphenols (724 ppm/kg) summarize this year’s 2024 crush green Coratina’s primary characteristics. It is a highly complex and harmonious extra virgin olive oil full of fruity-sweet aromas, including green almond, artichoke stem, and tomato leaf. You will experience surprisingly bright, balanced bitterness and spicy, fruity flavors upon tasting. The finish has hints of wild chicory, bitter green almond, and black pepper. Drizzle over pizza, soft cheese, hearty soups, grilled steak, or salmon. -
Its aroma is pronounced and herbaceous with hints of tomato vine, artichoke and olive leaf. Its taste is well-balanced in bitter and spicy notes with pleasant peppery finish. Emerald green in color with a robust flavor. Picual olive is the most stable (i.e. it can stand high temperatures and is therefore apt for frying and cooking), it will keep for a long time (>3-4 years without loosing any of it's properties), is rich in polyphenols, the olive's natural antioxidant, has a low acidity (0.19º). This oil is perfect for complementing complex-flavored foods such as grilled meats, octopus, squash and hearty soups. -
